Recipe for Chainsoo


Ingredients


You will need the following ingredients:

  •  1 cup black gram (urad dal)

  •  2 tablespoons mustard oil

  •  1 teaspoon cumin seeds

  •  1 teaspoon turmeric powder

  •  1 teaspoon coriander powder

  •  1 teaspoon red chili powder

  •  1/2 teaspoon garam masala

  •  1/4 teaspoon asafoetida (hing)

  •  1 onion, finely chopped

  •  45 garlic cloves, minced

  •  1inch piece of ginger, minced

  •  Salt to taste

  •  Fresh coriander leaves for garnish

  •  Water

Preparation Method


1. Roasting the Lentils: Begin by roasting the black gram (urad dal) in a dry pan over medium heat. Stir continuously to ensure even roasting until the dal turns golden brown and releases a nutty aroma. Remove from heat and let it cool.


2. Grinding the Lentils: Once the roasted dal has cooled, grind it into a coarse powder using a blender or mortar and pestle. The texture should be slightly grainy.


3. Cooking Process:

  •  Heat mustard oil in a deep pan or kadai over medium heat.

  •  Add cumin seeds and let them splutter.

  •  Add asafoetida, followed by chopped onions, garlic, and ginger. Sauté until the onions turn golden brown.

  •  Add turmeric powder, coriander powder, and red chilli powder. Mix well.

  •  Add the roasted dal powder and stir continuously to combine with the spices.

  •  Gradually add water to achieve a thick, currylike consistency. Stir well to avoid lumps.

  •  Add salt to taste and cover the pan. Let it simmer on low heat for about 2030 minutes, stirring occasionally.

  •  Once the curry has thickened and the flavours have melded together, add garam masala and mix well.

  •  Garnish with fresh coriander leaves before serving.

It is best enjoyed with steamed rice or mandua roti. Here are some serving suggestions:


  • With Steamed Rice: The rich and earthy flavor of Chainsoo pairs perfectly with plain steamed rice, making it a comforting and satisfying meal.
