Recipe for Badi ki Sabji


Ingredients


For the Badis

  • 1 cup Urad Dal (split black gram)

  • 1/2 tsp Asafoetida (Hing)

  • Salt to taste

  • Oil for frying


For the Sabji

  • 6 tbsp Mustard Oil

  • 1 tsp Cumin Seeds

  • 1 tsp finely chopped Garlic (optional)

  • 1 tbsp finely chopped Coriander Stalks

  • 2 tbsp Whole Wheat Flour

  • 1 tsp Red Chili Powder

  • 1/2 tsp Turmeric Powder

  • 1 tsp Salt (or to taste)

  • 3 cups Water

  • 2 tbsp finely chopped Coriander Leaves


Instructions


Making the Badis:

1. Soak and Grind Urad Dal: Soak the urad dal in water for 4-5 hours. Drain and grind to a smooth paste with asafoetida and salt.

2. Shape and Fry Badis: Shape the paste into small nuggets. Heat oil in a pan and fry the badis until golden brown. Set aside.


Preparing the Sabji:

1. Fry Badis: Heat 2 tablespoons of mustard oil in a kadhai. Fry the badis until they turn deep brown. Remove and set aside.

2. Prepare the Base: In the same kadhai, heat the remaining mustard oil. Add cumin seeds, garlic, and coriander stalks. Fry for 30-40 seconds until fragrant.

3. Add Flour and Spices: Add whole wheat flour and roast on low heat until golden brown. Add red chili powder, turmeric powder, and salt.

4. Add Water: Gradually add water, stirring continuously to avoid lumps.

5. Simmer with Badis: Add the fried badis to the curry. Bring to a boil, then simmer for 20 minutes, stirring occasionally.

6. Garnish and Serve: Add chopped coriander leaves. Serve hot with plain rice.

Pahadi Badi Ki Sabji pairs perfectly with steamed rice. For a complete Kumaoni meal, serve it with arhar dal fry, local radish salad, and a dollop of ghee.
